This past March, our UMH senior living communities celebrated Nutrition Month with a month-long event focused on healthy choices and eating right. Our Dining Services teams and our UMH Senior Care Dietitian, Tina Miller, RD, rolled out “Savor the Flavor of Eating Right,” nutrition education and information campaign, which is sponsored annually by the Academy of Nutrition and Dietetics.
The importance of making informed food choices was shared not only with our residents but also with our staff. Several of our chefs helped to create unique, new, healthy lunch options for our staff, which were offered on Mondays during the month of March and later prepared for our residents that same week. The new and adapted recipes were distributed on recipe cards for staff, residents, family members, or volunteers to try out at home.
We thought you might enjoy some of these recipes yourself! Feel free to check them out and download or print them for your weekly meal plans or introduce one to your aging loved one. Some of our favorites were the Spicy Chicken Quinoa Soup and the Chopped Mexican Salad!
